The Edible Country campaign has turned Sweden into a do-it-yourself restaurant, where you are the guest. Together with regional tourist boards, Visit Sweden has placed these hand made wooden tables in some lovely locations all over the country.
The menu varies according to where the table is situated, but it’s always traditional Swedish food, with local regional produce. Several of the ingredients are ones you can find yourself in forests, meadows and the sea/lakes.
Perhaps the two most prominent attractions of Småland’s nature are the deep forests and thousands of shimmering lakes. Here, traditional food is celebrated and Småland’s unique nature inspires local menus. Taste the flavours of Småland as you go along the trails and don’t forget to pick the fresh wild strawberries. The table at Wallby is located almost exactly in the center of Småland, situated on the edge of the beautiful Skirö lake, a little over an hour’s drive from any of the region’s three main cities: Jönköping, Kalmar and Växjö.

When you book the cooking kit, we will make sure that all utilities that you need for cooking and eating is prepared for you in the forest at arrival. With the cooking kit, you’ll also get an overview over the plants used in the dishes, in order to lead you a bit to a safer “picking stroll” of plants. But note that you still work by yourself, bringing the ingredients you need, picking plants and cooking by yourself in the forest.

A: A guided safari tour around Wallby Säteri. We pick ingredients together in the forest. We try fishing in lake Skirösjön. And then we cook it together out in the nature. Setting the table and enjoy everything that the nature give us.

B: ”Far away from the madding crowd” enjoy the nature around Wallby Säteri. Take a break from everything and explore our ”garden” of forests, lakes and open fields. A great way to get out and explore the Countryside, enjoy the views, see farm animals and wildlife, accompanied by one of our Guides. Have you ever tried a wood fired sauna with a swim in a dark lake?
The experience starts with a light lunch upon arrival. Check in to your hotel room and get dressed for an outdoor stay. We pick ingredients together in the forrest. We try fishing in lake Skirösjön. And then we cook it together out in the nature. The day ends with coffee boiled over open fire and perhaps looking up on the stars. Goodnight and the morning after starts with a slow breakfast.

The cooking kit includes all utilities that you need to cook the menu in “The edible country” and to eat your lunch in the nature by the lake. Note that you still will need to bring and pick the ingredients and cook your meal all by yourself if you don’t add that as an extra here (see above A & B).
When you book “cooking kit” you still have to bring and pick your own ingredients and also to cook your lunch all by yourself. You can add a guided safari tour for picking ingredients, ingredients prepared in the forest, a local cooking guide for the cooking session or a prolonged stay under the stars (see above A & B).
You need to be prepared for an outdoor stay, remember to check the weather report and adjust your clothes after the report. To arrive to the table (and to pick your ingredients) you have to walk in the nature, so be prepared with good shoes and outdoor clothes!
